SIAD - OICCE International Award Edition 2021: 'Il Cascinone' Winery wins with a project to improve the quality of Cortese-based wines.

The SIAD International Award for Innovation in the use of technical gases in oenology, at its second edition, has had an important feedback. The candidatures were analyzed by an international Jury composed of technicians, university professors, researchers and gas experts.

Among the many proposals received, the Jury awarded the project entitled "Valorization of Cortese-based wines by means of pre-fermentative maceration with cryogenic gas", presented by a working group led by Dr. Alberto Caudana and composed by oenologist Carlo Manera from Cantina Araldica, oenologists Gaetano Pio Liscio and Camilla De Paolis from the Experimental Cellar of the University of Turin and oenologist Martina Bordellini.

The experimental project is focused on a vinification model capable of extracting more of the primary aroma component of the grape through a short but effective cold maceration, exploiting the time in the press to obtain a release of soluble compounds in the must, limiting the release of phenolic substances.

The use of carbon dioxide dispensed on the crushed grapes which flows into the press allows to obtain a rapid cooling, a slightly cauterizing action of the skin tissues which favors the transfer, a limitation of the presence of oxygen which is the cause of oxidasic activities. As other varieties can also benefit from these effects, there will be tests on aromatic grapes such as Brachetto, Sauvignon blanc and also on Nebbiolo where the lowering of temperature and the scarce presence of oxygen could favor the extraction and protection of the first anthocyanic fractions which come out from skins during mashing.

The project started with the 2021 harvest at "Il Cascinone" winery in Acqui Terme, Piedmont, a winery of Araldica.

Araldica, with 900 hectares (1,500 acres) distributed among Monferrato, Gavi, Langhe and Roero, cultivated by about 140 members, cultivates and manages one of the largest vineyards of Piedmont.

The Award, consisting of an economic recognition and a special SIAD Medal, will be delivered by SIAD in collaboration with OICCE during an important technical-scientific event organized during 2022.

The 2022 edition of the Prize, aimed at promoting research into the application of technical gases in Viticulture and Oenology, will be presented shortly.

The Award is open to university researchers, technicians, students, companies, consortia and to those who present original research projects that have as their object the innovative use of nitrogen, carbon dioxide, argon and oxygen, within the entire chain of the viticulture and oenology sector.

In this way we want to stimulate technicians and researchers to propose new ideas, which will receive economic support for their realization.
