The Lobby
Amid a profusion of decorative blooms and plants, diners at the hotel's iconic Lobby restaurant can partake of a four-course menu created by Chef de Cuisine Anton Ho for either lunch or dinner. Priced at HK$ 588* per person, the feast begins with an appetiser of cuttlefish pappardelle with cherry tomato, black olives, bell pepper purée, and lemon dressing, followed by fresh ginseng and silky chicken soup. The main course offers a tempting choice of pan-fried sea bream with braised fennel and orange or corn-fed chicken with white asparagus, pesto potato and Albufera sauce; a dessert of rosewater-infused strawberries, light yoghurt cream with strawberry sauce and Champagne sorbet makes a sweet finish.

Chesa
For a cosy, convivial Mother's Day lunch, the culinary team at Swiss restaurant Chesa has devised a four-course set menu that highlights the flavours of Switzerland. Priced at HK$ 688* per person, the offerings include a scallop and salmon tartare with hazelnut and bacon vinaigrette, grilled Dutch veal loin with glazed spring vegetables and balsamico sauce, and a rose tea macaron with vanilla chantilly and lychee confit.

Spring Moon
For an exceptional Cantonese Mother's Day feast, Chef Lam Yuk Ming of the hotel's Michelin-starred Spring Moon restaurant will offer an eight-course set dinner menu to honour the occasion. Priced at HK$ 5,380* for four, the menu includes dishes such as double-boiled sea cucumber soup with sea dragon and conpoy, steamed spotted garoupa fillet with matsutake mushrooms, and braised whole five-head abalone and fish maw with rich chicken sauce festively served in a pumpkin.

The Verandah
The ever-popular Verandah restaurant is known for its bountiful buffets laden with fresh gourmet dishes. On this special day, the spread will include a selection of special Mother's Day preparations: melon-and-sea conch soup, steamed chicken with fish maw and cordyceps, sea urchin sushi, Japanese-style steamed egg custard with snow crab, and seafood salad with truffle dressing. Priced at HK$ 1,388* per adult and HK$ 688* per child, the fare will please a wide variety of palates.

Felix
To toast Mum's special day with spectacular, sky-high views, the culinary team at Felix has planned a Mother's Day Brunch filled with culinary delights. Priced at HK$1,388* per person, the menu includes "Mum's Breakfast" (a selection of egg preparations along with sourdough bread and French toast), smoked fish and seafood platters, and a "Tribute to Mums of The World" (a choice of main courses from five different countries). These will be followed by a plethora of desserts and ice-cream treats, in addition to champagne and cocktails.

Gaddi's
For guests who would like to celebrate Mother's Day in truly extravagant style, the Michelin-starred French restaurant Gaddi's is delighted to offer a six-course lunch and dinner menu curated by Chef de Cuisine Albin Gobil. Priced at HK$ 2,088* per person, the feast commences with Scottish langoustine tartare with Kristal caviar, crème fraîche, and calamansi dressing; and continues with Périgord foie gras in a morel consommé with green asparagus and lardo di Colonnata. Following on is French line-caught sea bass with black Crimean tomato,Taggiasca olives and basil; and rack of Limousin veal with white asparagus, wild garlic, yellow Jura wine, and soufflé potatoes. After a palate-cleansing Champagne and raspberry granita, a finale of yuzu soufflé with black sesame ice cream is served.
