At this chefs' table, a four-hand dinner will showcase signature comfort dishes from both cuisines combining the sweet, sour, salty, and spicy flavours that are typical of Thai and Vietnamese cooking. Besides a new takes on classic dishes, the chefs will showcase their own creative dishes that combine ingredients and techniques from both cultures. "Food is a powerful narrative tool to tell a story," feels Yên. "Guests can learn about the history, ingredients, and cooking techniques with this menu, giving them a deeper understanding of the cultural and culinary traditions of both countries," adds Taingtrong. At this celebrated dining experience, guests can expect to relish grilled beef with five spice sauce, fresh prawn summer roll, char-grilled eggplant with spring onion and soya sauce, longan and lotus sweet soup. "Each dish narrates a part of the region's heritage, inviting diners to deeply engage with the flavours and stories of the destinations," says Yên.

While Thai cuisine is renowned for striking bold and aromatic flavours, it is the delicate balance between sweet, sour, salty, and spicy elements that stands it apart from other culinary traditions. "I use a variety of fresh herbs and spices such as lemongrass, galangal, makrut lime leaves, and Thai basil to create complex and vibrant dishes," shares Taingtrong. "Ingredients such as coconut milk, fish sauce, and shrimp paste are commonly used to add depth and richness to Thai cuisine." On the other hand, Vietnamese cuisine is characterised by its fresh and light flavours, with an emphasis on the natural essence of ingredients. "While we use a wide array of fresh herbs, vegetables, and fruits to create dishes that are both nutritious and flavourful like Thai cuisine, our key ingredients include rice noodles, fish sauce, lime, and herbs such as cilantro, mint, and Vietnamese basil," explains Yen. Although the cuisines share cooking techniques such as steaming, Thai cuisine is known for stir-frying and grilling, while Vietnamese delicacies are boiled or braised to highlight the freshness and simplicity. "Together, we will create a culinary masterpiece that transcends borders and speaks to the soul," the chefs echo.
