Lemon Hummus with Baby Veggies Recipe

Our easy lemon hummus recipe is an easy and delicious healthy snack that you can enjoy with your favorite vegetables!

Ingredients
  • 1 15-oz can chickpeas; or 2 cups of cooked chickpeas
  • 1/2 cup tahini
  • 5 tbsp extra virgin olive oil
  • 1/4 cup lemon juice
  • 4 garlic cloves, roasted
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1 tablespoon extra virgin olive oil (optional)
  • Assortment of your favorite baby vegetables such as carrots, broccoli or cucumbers

Directions
  1. Drain and rinse chickpeas (reserve a cup of the liquid from the can or from the cooking process)
  2. Combine the chickpeas, tahini, extra virgin olive oil, lemon juice, garlic, salt, black pepper, and cayenne pepper in the bowl of a food processor fitted with a metal blade.
  3. Process until the mixture is smooth. If the mixture is too thick, add 1 to 2 tablespoons of the reserved liquid until desired consistency is reached.
  4. Remove to a serving dish and drizzle with 1 tablespoon extra virgin olive oil before serving, if desired.
  5. Enjoy your freshly made hummus with an assortment of your favorite vegetables!
