The Peninsula Paris Welcomes Returning Guests – and a New Head Sommelier – to Its Acclaimed Restaurants

New summer menus, scenery, and wine choices greet diners at the legendary hotel on 9 June.

The Peninsula Paris, whose glamour and heritage have long drawn discerning travellers from around the globe, is delighted to announce the reopening of its famed indoor restaurants on Wednesday, June 9. The hotel is similarly pleased to welcome wine connoisseur Florent Martin to its culinary team as Head Sommelier.

Mr. Martin will lend his wine expertise to all of The Peninsula Paris's restaurants - including the Michelin-starred L'Oiseau Blanc; the Cantonese hotspot Lili; Le Lobby and the soignées alfresco dining terraces of La Terrasse Kléber and Le Rooftop. Prior to joining The Peninsula Paris, Mr. Martin's deep knowledge of viticulture and wine pairing earned him the 'Best Sommelier of France 2020' award.

'It was an honour to receive such an illustrious award in recognition of my hard work and passion for wine,' said Mr. Martin. 'And it gives me pleasure to bring these qualities to my new professional adventure. Working with The Peninsula Paris will let me add a beautiful new string to my bow.'

L'Oiseau Blanc Soars Again

The Peninsula Paris's Michelin-starred restaurant, L'Oiseau Blanc, once again invites guests to savour the exquisite French gastronomy of chef David Bizet. In a sleek, aviation-inspired space whose expansive windows look over the Eiffel Tower and Paris rooftops, diners can indulge in some of the city's finest cuisine.

Chef Bizet's menus, which highlight seasonal produce and exceptional ingredients, are acclaimed for their daring creativity. Among the dishes featured at L'Oiseau Blanc this summer are steamed red mullet with smoked eggplant; lacquered sweetbreads with chanterelles and goji berries; and smothered pigeon with Swiss chard and truffled cocoa. Luscious desserts from award-winning pastry sous-chef Anne Coruble - featuring flavours like Meyer lemon with crystallised wakame or crunchy Valrhona chocolate with candied Taggiasche olive - are equally inventive.

Enjoying such rarefied creations, while watching the sun set over the dazzling City of Lights, is one of the most unforgettable guest experiences at The Peninsula Paris.

La Vie en Rose Blooms at The Peninsula Paris Rooftop

In celebration of the summer season - and the reopening of its singularly elegant Belle Époque-era rooftop restaurant - The Peninsula Paris has transformed Le Rooftop into a blossoming rose garden. Along with small plates created by chef David Bizet, chic cocktails, and sweeping views over the Paris cityscape, diners can now enjoy a lush atmosphere perfumed by dozens of heirloom rose plantings.

The floral theme is reinforced by a special selection of summery rosé wines, offered in partnership with the prestigious Château d'Esclans. Set in the heart of the Var, a region known for its production of Provence AOC rosé varietals, the winery is renowned for its 'Whispering Angel,' 'Château,' and 'Garrus' labels - all of which will be available to Le Rooftop guests.
